Duncan Hines Who?






I ate my weight in cupcakes last night. Here's the proof:  I took a few lemony goodness photos before I devoured the entire plate of sweet confection. It was so worth it. I think a batch of zippy lemon cupcakes could be one of my favorite things in the world. Some say chocolate. I say lemon. If anyone has a good recipe, please share. But for now, here's mine. They're not just delicious, they're extra delicious. So much for getting into that Marc Jacobs swimsuit, hey guys? Hmmm... you can have cupcakes for breakfast, right? Right.

2 ¼ cups pastry flour
1 ½ cups sugar
1 tbsp baking powder
1 tsp fine salt
1/3 cup canola oil
3/4 cup buttermilk
1 ½ tsp vanilla extract
1 tbsp freshly grated lemon zest
¼ cup fresh lemon juice
2 large eggs
Bake at 375 F for 15 minutes or until golden brown.
Once cooled, slather with your favorite frosting. This is a good recipe. Enjoy.

YUM. Lemon cupcakes = the only reason I got married :) And ideal for breakfast, lunch and dinner, lady. Eff the MJ suit.
